As per Raelynn's request, here is my favorite cupcake recipe:
Mix and set aside:
1 8 oz. cream cheese, softened
1 egg
1/3 c. sugar
a pinch of salt
6 oz. semi-sweet chocolate chips
In a separate bowl, make a devil's food cake mix according to instructions on the box (I know, that's cheating).
In cupcake cups:
Fill half full with cake batter
Spoon 1/2 T. of cream cheese filling on top of cake batter
Cover the filling with more batter
Bake at 375* for 15-20 minutes.
Cool and then frost with this:
Mix:
1 8 oz. cream cheese
1/2 c. butter
1 tsp. vanilla
1 lb. powdered sugar
